Barbecued Spicy Lamb Koftas

1 lb minced lamb
1 medium onion, finely chopped
1 clove garlic, crushed
2 tbsps chopped fresh mint
1 tsp ground coriander
1 tsp ground cardamom
¼ tsp curry powder
pinch cayenne pepper
½ cup packaged breadcrumbs
1 egg, lightly beaten
1 cup packaged breadcrumbs, extra
Yoghurt Dressing
cup plain yoghurt
1 tbsp chopped fresh coriander
2 tsps chopped fresh mint
½ tsp grated lemon rind

Yoghurt Dressing: Beat all the ingredients in a small bowl until well combined. Refrigerate.

1. In a medium bowl, add onion, garlic, herbs, spices and breadcrumbs. Mix together well using your hands. Divide meat mixture into 12 even portions. Mould into sausage shapes around oiled, metal skewers.

2. Brush lightly with egg; roll in extra breadcrumbs to coat evenly. Store in the refrigerator, covered with plastic wrap, 1 hour or overnight.

3. Place skewers on a lightly greased grill or flat plate. Cook over medium heat for 10 minutes or until cooked through, turning occasionally. Serve with Yoghurt Dressing.

     Serves 6.
